Avocado Spring Rolls

Ingredients:
For the Spring Rolls:
8-10 rice paper wrappers
2 ripe avocados, thinly sliced
1 large carrot, julienned
1 cucumber, julienned
1 red bell pepper, thinly sliced
1 cup fresh bean sprouts
1 cup thinly sliced purple cabbage
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
1/2 cup fresh basil leaves
2 tablespoons sesame seeds (for garnish)
For the Thai Mango Sauce:
1 ripe mango, peeled, pitted, and diced
2 tablespoons rice vinegar
1 tablespoon soy sauce or tamari (for a gluten-free option)
1 tablespoon honey or agave nectar (for a vegan option)
1 small clove garlic, minced
1/2 teaspoon grated fresh ginger
1/4 teaspoon red pepper flakes (adjust to your spice preference)
Instructions:
1. Prepare the Mango Sauce:
In a blender or food processor, combine the diced mango, rice vinegar, soy sauce, honey (or agave nectar), minced garlic, grated ginger, and red pepper flakes.
Blend until smooth. Taste and adjust the sweetness or spiciness as needed. Transfer the sauce to a bowl and set it aside.
2. Prepare the Ingredients:
Prepare all your vegetable and herb fillings, including slicing the avocados, julienning the carrots and cucumbers, and thinly slicing the purple cabbage.
3. Soften the Rice Paper Wrappers:
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable but not too soft. Place it on a clean, damp kitchen towel.
4. Assemble the Spring Rolls:
Lay a few slices of avocado in the center of the rice paper wrapper.
Add a small portion of carrots, cucumber, red bell pepper, bean sprouts, purple cabbage, cilantro, mint, and basil on top of the avocado.
5. Roll the Spring Rolls:
Fold in the sides of the rice paper wrapper and then tightly roll it up from the bottom, similar to rolling a burrito.
6. Repeat the Process:
Repeat the process with the remaining ingredients, making as many spring rolls as desired.
7. Serve with Mango Sauce and Sesame Seeds:
Serve the spring rolls with the Thai mango sauce for dipping.
Sprinkle sesame seeds over the spring rolls for added crunch and flavor.
You can also garnish with extra fresh herbs and red pepper flakes if you like.
