Gluten-Free Creamed Spinach

  • 1 pound fresh spinach leaves, washed and trimmed

  • 2 tablespoons unsalted butter (or dairy-free margarine for a vegan option)

  • 2 cloves garlic, minced

  • 2 tablespoons gluten-free all-purpose flour (or regular flour if not following a gluten-free diet)

  • 1 cup milk (or dairy-free milk for a vegan option)

  • 1/4 cup grated Parmesan cheese (or dairy-free nutritional yeast for a vegan option)

  • Salt and black pepper, to taste

  • A pinch of ground nutmeg (optional)


1. Prepare the Spinach:

  • In a large pot or skillet, wilt the fresh spinach over medium heat. This can be done by adding the washed and trimmed spinach leaves to the pot and covering it. Allow the spinach to cook for about 2-3 minutes until it's wilted. Drain any excess liquid and set the wilted spinach aside.

2. Make the Cream Sauce:

  • In the same pot or skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

  • Sprinkle the gluten-free all-purpose flour over the garlic and butter. Stir constantly for 1-2 minutes to cook the flour, creating a roux.

  • Gradually pour in the milk while continuing to whisk to avoid lumps. Cook for another 2-3 minutes, or until the sauce thickens.

3. Add Parmesan and Season:

  • Stir in the grated Parmesan cheese (or nutritional yeast) until it's fully incorporated into the sauce. Season with salt, black pepper, and a pinch of ground nutmeg if desired.

4. Combine with Spinach:

  • Return the wilted spinach to the pot and stir it into the creamy sauce. Cook for an additional 2-3 minutes, allowing the spinach to absorb the flavors of the sauce and heat through.
