  • 1 cup unsweetened almond milk (or any dairy-free milk)

  • 2 tablespoons coconut flour (or almond flour)

  • 1/2 cup grated dairy-free cheese (optional)

  • 1/2 cup crispy fried onions (look for a low-carb or gluten-free option)

  • Salt and black pepper, to taste


Instructions:

1. Blanch the Green Beans:

  • Bring a large pot of water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and slightly tender. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Drain again and set aside.

2. Sauté the Mushrooms:

  • In a large skillet, heat the olive oil over medium-high heat. Add the sliced mushrooms and cook for about 5-7 minutes until they are browned and any liquid has evaporated. Add the minced garlic and sauté for another 1-2 minutes. Remove from heat.

3. Make the Low-Carb Creamy Sauce:

  • In a saucepan, whisk together the almond milk and coconut flour until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens (about 3-5 minutes). Remove from heat and season with salt and black pepper.
