For the Almond Flour Crust:

  • 2 cups almond flour

  • 1/4 cup coconut flour

  • 1/2 cup melted coconut oil or butter (for a non-vegan version)

  • 1/4 cup granulated erythritol or sweetener of your choice

  • 1/2 teaspoon salt

For the Sugar-Free Pecan Filling:

  • 2 cups pecan halves

  • 1/2 cup granulated erythritol or sweetener of your choice

  • 1/2 cup sugar-free maple syrup

  • 1/3 cup melted coconut oil or butter (for a non-vegan version)

  • 2 large eggs (for a vegan version, you can use egg replacers like flax eggs or aquafaba)

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon salt

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Make the Almond Flour Crust:

  • In a mixing bowl, combine almond flour, coconut flour, melted coconut oil or butter, sweetener, and salt.

  • Press the mixture into the bottom of a greased 9x9-inch (23x23 cm) baking dish, forming an even crust.

  • Bake the crust in the preheated oven for 10-12 minutes, or until it's lightly golden. Remove from the oven and let it cool slightly.

3. Prepare the Sugar-Free Pecan Filling:

  • In a separate mixing bowl, whisk together granulated erythritol or sweetener, sugar-free maple syrup, melted coconut oil or butter, eggs (or egg replacer), vanilla extract, and salt until well combined.

  • Gently fold in the pecan halves.

4. Assemble and Bake:

  • Pour the sugar-free pecan filling evenly over the pre-baked almond flour crust.

  • Return the baking dish to the oven and bake for an additional 25-30 minutes or until the filling is set and the edges are golden brown.

5. Cool and Slice:

  • Allow the pecan pie bars to cool in the baking dish for about 30 minutes, then transfer them to the refrigerator to chill for at least 2 hours or until fully set.

6. Serve:

  • Once set, slice the pecan pie bars into squares or rectangles.

  • Enjoy your delightful Low-Carb Pecan Pie Bars, a sugar-free twist on a classic treat!

These Pecan Pie Bars offer all the warm, nutty goodness of traditional pecan pie without the excess sugar and carbs, making them a perfect choice for those watching their carb intake.
