Ingredients:
4 large bell peppers, any color
1 pound lean ground turkey
1 cup cauliflower rice (you can make your own by pulsing cauliflower florets in a food processor)
1 cup diced tomatoes (canned or fresh)
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon olive oil
1 teaspoon dried Italian seasoning (or a blend of dried basil, oregano, and thyme)
Salt and black pepper, to taste
1 cup shredded low-fat mozzarella cheese (optional, for topping)
Fresh basil leaves, for garnish (optional)
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prep the Bell Peppers:
Slice off the tops of the bell peppers, removing the seeds and membranes. Set aside.
3. Sauté the Ground Turkey:
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant.
Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks.
Drain any excess fat from the skillet.
4. Combine the Filling:
In the skillet with the cooked turkey, add the cauliflower rice, diced tomatoes, Italian seasoning, salt, and black pepper. Stir to combine and let it cook for a few minutes until the cauliflower rice is tender.
5. Fill the Bell Peppers:
Stuff each bell pepper with the turkey and cauliflower rice mixture, pressing it down gently to pack it.
6. Bake:
Place the stuffed bell peppers in a baking dish. If desired, sprinkle shredded low-fat mozzarella cheese over the top of each pepper.
Cover the dish with foil and bake in the preheated oven for 25-30 minutes or until the bell peppers are tender.
7. Garnish and Serve:
If desired, garnish with fresh basil leaves before serving.
