4 large bell peppers, any color
1 pound lean ground turkey
1 cup cauliflower rice (you can make your own by pulsing cauliflower florets in a food processor)
1 cup diced tomatoes (canned or fresh)
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon olive oil
1 teaspoon dried Italian seasoning (or a blend of dried basil, oregano, and thyme)
Salt and black pepper, to taste
1 cup shredded low-fat mozzarella cheese (optional, for topping)
