Low-Carb Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers, any color

  • 1 pound lean ground turkey

  • 1 cup cauliflower rice (you can make your own by pulsing cauliflower florets in a food processor)

  • 1 cup diced tomatoes (canned or fresh)

  • 1/2 cup diced onion

  • 2 cloves garlic, minced

  • 1 teaspoon olive oil

  • 1 teaspoon dried Italian seasoning (or a blend of dried basil, oregano, and thyme)

  • Salt and black pepper, to taste

  • 1 cup shredded low-fat mozzarella cheese (optional, for topping)

  • Fresh basil leaves, for garnish (optional)


Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Prep the Bell Peppers:

  • Slice off the tops of the bell peppers, removing the seeds and membranes. Set aside.

3. Sauté the Ground Turkey:

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant.

  • Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks.

  • Drain any excess fat from the skillet.

4. Combine the Filling:

  • In the skillet with the cooked turkey, add the cauliflower rice, diced tomatoes, Italian seasoning, salt, and black pepper. Stir to combine and let it cook for a few minutes until the cauliflower rice is tender.

5. Fill the Bell Peppers:
