Stuffed Mushrooms

Ingredients:

  • 16-20 large button or cremini mushrooms, cleaned and stems removed

  • 1 cup fresh spinach, finely chopped

  • 1/2 cup breadcrumbs (preferably Panko)

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup crumbled gorgonzola cheese

  • 1/4 cup finely diced onion

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Mushroom Caps:

    • Remove the stems from the mushrooms and set them aside. You'll use them in the stuffing.

    • Remove the skillet from the heat and stir in the breadcrumbs, shredded mozzarella cheese, crumbled gorgonzola cheese, and chopped parsley. Season with salt and pepper to taste. The mixture should hold together when pressed.

  4. Stuff the Mushrooms:

    • Using a spoon, fill each mushroom cap generously with the cheese and spinach stuffing mixture, pressing it down slightly.

  5. Bake:

    • Place the stuffed mushrooms back on the baking sheet or in the baking dish.

    • Bake in the preheated oven for about 20-25 minutes or until the mushrooms are tender and the tops are golden brown.
