  • 1 teaspoon pure vanilla extract

  • 1/2 teaspoon salt

  • 1 cup brown sugar, packed

  • 1/2 cup gluten-free all-purpose flour

  • 1/3 cup unsalted butter, melted (or dairy-free margarine for a vegan option)

  • 1 cup chopped pecans (optional)


Instructions:

1. Prepare the Sweet Potatoes:

  • Preheat your oven to 350°F (175°C).

  • Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

  • Remove the sweet potatoes from the oven and let them cool slightly.

2. Mash the Sweet Potatoes:
