Ingredients:
1 whole turkey (12-15 pounds), thawed if frozen
1/2 cup dairy-free butter or margarine, softened
3 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons fresh sage, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Zest of 1 lemon
Juice of 1 lemon
1 onion, quartered
1 lemon, quartered
3-4 garlic cloves, peeled
4-5 sprigs of fresh rosemary, thyme, and sage
1 cup dairy-free chicken or vegetable broth
Instructions:
1. Preheat the Oven:
Preheat your oven to 325°F (165°C).
2. Prepare the Herb and Garlic Butter:
In a bowl, combine the softened dairy-free butter, minced garlic, chopped rosemary, thyme, and sage, salt, black pepper, lemon zest, and lemon juice. Mix until well combined.
3. Prep the Turkey:
Remove the giblets and neck from the turkey cavity. Pat the turkey dry with paper towels.
4. Season the Turkey:
Gently lift the skin of the turkey and rub the herb and garlic butter mixture underneath the skin, covering as much of the breast and thigh meat as possible. Massage the butter mixture all over the outside of the turkey as well.
5. Stuff the Cavity:
Place the quartered onion, lemon, peeled garlic cloves, and fresh herb sprigs inside the turkey cavity. This will add flavor from the inside as it roasts.
6. Truss the Turkey:
Use kitchen twine to tie the legs together to help the turkey cook evenly.
7. Roast the Turkey:
Place the turkey on a roasting rack in a large roasting pan. Pour the dairy-free chicken or vegetable broth into the bottom of the pan.
Cover the turkey with aluminum foil and roast in the preheated oven.
Roast the turkey according to the package instructions or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
8. Baste:
While roasting, baste the turkey with the juices from the pan every 30 minutes to keep it moist.
9. Rest and Carve:
Once the turkey is done, remove it from the oven, tent it with foil, and let it rest for about 20-30 minutes before carving.
