Ingredients:
4 large bell peppers (any color)
1 cup gluten-free quinoa, rinsed and drained
2 cups water
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup canned black beans, drained and rinsed
1 cup canned diced tomatoes (or fresh diced tomatoes)
1 cup corn kernels (fresh, frozen, or canned)
1 teaspoon ground cumin
1/2 teaspoon chili powder (adjust to taste)
Salt and black pepper, to taste
1 cup shredded gluten-free cheese (optional, for topping)
Chopped fresh cilantro or parsley for garnish
Instructions:
1. Prepare the Bell Peppers:
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes from inside. Set aside.
2. Cook the Quinoa:
