Gluten-Free Shepherd's Pie

Ingredients:

For the Filling:

  • 1 pound ground beef or ground lamb (or a combination of both)

  • 1 onion, chopped

  • 2 carrots, peeled and diced

  • 2 tablespoons gluten-free tomato paste

  • 1 cup gluten-free beef or vegetable broth

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)

For the Mashed Potato Topping:

  • 4 cups mashed potatoes (prepared with butter or dairy-free margarine)

  • 1/4 cup milk (or dairy-free milk)

  • Salt and black pepper, to taste

  • 1/2 cup shredded gluten-free cheddar cheese (optional)


Instructions:

1. Prepare the Filling:

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and carrots and sauté for about 5 minutes until they begin to soften.

  • Add the minced garlic and ground meat (beef or lamb) to the skillet. Cook, breaking the meat apart with a spoon, until it's browned and cooked through.

  • Stir in the gluten-free tomato paste, dried thyme, salt, and black pepper. Cook for another 2-3 minutes.

  • Pour in the gluten-free beef or vegetable broth, frozen peas, and frozen corn. Simmer for 5-7 minutes until the mixture thickens. Remove from heat.

2. Make the Mashed Potato Topping:

  • In a separate bowl, mix the mashed potatoes, milk, salt, and black pepper until they are smooth and creamy. If desired, fold in the shredded gluten-free cheddar cheese for added flavor.

3. Assemble the Shepherd's Pie:

  • Preheat your oven to 375°F (190°C).

  • Transfer the meat and vegetable mixture into a 9x13-inch baking dish.

  • Spread the mashed potato mixture evenly over the top of the filling.

4. Bake:

  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbly.
