Roast Thanksgiving Turkey

Ingredients:
1 whole turkey (12-14 pounds), thawed if frozen
1/2 cup unsalted butter (or dairy-free margarine for a dairy-free option), softened
2 tablespoons gluten-free poultry seasoning
2 teaspoons salt
1 teaspoon black pepper
1 lemon, cut into wedges
1 onion, quartered
4-6 cloves garlic, peeled
Fresh herbs (such as rosemary, thyme, and sage)
Gluten-free chicken or turkey broth, for basting
Instructions:
1. Prepare the Turkey:
Preheat your oven to 325°F (165°C).
Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out with cold water and pat it dry with paper towels.
Place the turkey on a roasting rack set inside a large roasting pan.
2. Season the Turkey:
In a small bowl, combine the softened butter, gluten-free poultry seasoning, salt, and black pepper. Mix until well combined.
Carefully separate the skin from the turkey breast and thighs, being gentle not to tear the skin. Spread the seasoned butter mixture under the skin, covering as much of the meat as possible.
